Ruim 250 gasten waren aanwezig bij de openingsceremonie, waaronder Belgische- en Nederlandse pers.<\/strong><\/p>\n<p>Gedeputeerde De Bat verrichte de opening van een van Nederlands grootste viskwekerijen door een sleutel om te draaien, waarna op tv schermen in de ontvangsttent te zien was hoe de nieuwste bassins gevuld werden met Oosterscheldewater. De sleutel was middels een drone uit de Oosterschelde opgevist en neergelaten bij de kwekerij van Kingfish Zeeland. Een medewerkster van Kingfish haalde de sleutel van de drone en bracht die naar het podium.<\/p>\n<p><strong>Dutch yellowtail<br \/>\n<\/strong>King Fish Zeeland produceert al vanaf oktober op beperkte schaal yellowtail kingfish, na een onverwachte vliegende start. De kweek vindt plaats op het terrein nabij de Zeelandbrug, waar eerder de Stichting Zeeuwse Tong en de oesterkwekerij van Smit&amp; Smit gevestigd waren.<\/p>\n<p><img decoding=\"async\" class=\"size-medium wp-image-1299 alignleft\" src=\"http:\/\/www.seafoodstories.nl\/wp-content\/uploads\/2018\/04\/Opening-KingfishZeelandapril2018klein-26-200x300.jpg\" alt=\"\" width=\"200\" height=\"300\" srcset=\"https:\/\/www.seafoodstories.nl\/wp-content\/uploads\/2018\/04\/Opening-KingfishZeelandapril2018klein-26-200x300.jpg 200w, https:\/\/www.seafoodstories.nl\/wp-content\/uploads\/2018\/04\/Opening-KingfishZeelandapril2018klein-26-768x1152.jpg 768w, https:\/\/www.seafoodstories.nl\/wp-content\/uploads\/2018\/04\/Opening-KingfishZeelandapril2018klein-26-683x1024.jpg 683w, https:\/\/www.seafoodstories.nl\/wp-content\/uploads\/2018\/04\/Opening-KingfishZeelandapril2018klein-26.jpg 2000w\" sizes=\"(max-width: 200px) 100vw, 200px\" \/>Tijdens de offici\u00eble opening presenteerde chefkok Mart Scherp, eigenaar van restaurant Scherp uit Middelburg en ambassadeur van Kingfish Zeeland, diverse amuses met Dutch yellowtail. Scherp is enthousiast over de bijzonder smaak en de veelzijdig te bereidingswijzen. \u201cDe vis kan worden gegrild, gebakken of gerookt, maar is ook erg geschikt voor rauwe bereidingen, waaronder tartaar, sashimi, of ceviche.\u201d<\/p>\n<p><strong>Makkelijk te kweken<br \/>\n<\/strong>Yellowtail kingfish (Seriola Lalandi), ook wel hiramasa of hamachi genoemd, is een straalvinnige roofvis die van nature voorkomt in de wateren van Nieuw-Zeeland tot en met Zuid-Amerika. De vissen zwemmen in scholen op een diepte van ongeveer 800 meter en kunnen groeien tot een lengte van 2,5 meter met een gewicht van 95 kilo. Yellowtail kingfish is vooral populair in de Australische en Japanse keuken. Qua structuur en smaak is de soort vergelijkbaar met tonijn en zwaardvis.<\/p>\n<p>Yellowtail kingfish wordt nauwelijks bevist maar wel veel gekweekt, vooral in Australi\u00eb, Japan en Chili. De vis wordt veelal bevroren in Nederland ge\u00efmporteerd.<\/p>\n<p><img decoding=\"async\" class=\"size-medium wp-image-1297 alignright\" src=\"http:\/\/www.seafoodstories.nl\/wp-content\/uploads\/2018\/04\/Opening-KingfishZeelandapril2018klein-7-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" srcset=\"https:\/\/www.seafoodstories.nl\/wp-content\/uploads\/2018\/04\/Opening-KingfishZeelandapril2018klein-7-300x200.jpg 300w, https:\/\/www.seafoodstories.nl\/wp-content\/uploads\/2018\/04\/Opening-KingfishZeelandapril2018klein-7-768x512.jpg 768w, https:\/\/www.seafoodstories.nl\/wp-content\/uploads\/2018\/04\/Opening-KingfishZeelandapril2018klein-7-1024x683.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/>De yellowtail kingfish is relatief gemakkelijk te kweken. De vissen zijn stressbestendig, sterk en groeien erg snel. Ze zijn gewend om in scholen te leven dus veel vissen in een kleine ruimte is geen probleem voor deze dieren. De yellowtail kingfish plant zich in kweeksituaties probleemloos voort: de gekweekte vissen schieten zelf ook kuit, waardoor geen hormoonbehandelingen of menselijk ingrijpen nodig zijn, iets wat niet altijd vanzelfsprekend is bij vissen.<\/p>\n<p>De yellowtail kingfish wordt sinds 2011 in Nederland in proefopstellingen gekweekt bij Wageningen Marine Research in het Zeeuwse Yerseke, onder begeleiding van Kees Kloet. De resultaten waren zeer veelbelovend, met als uiteindelijk resultaat Kingfish Zeeland, waar op termijn 400 tot 500 ton vis per jaar gekweekt kan worden.<\/p>\n<p><strong>Geen foodmiles<br \/>\n<\/strong>Dutch Yellowtail wordt bij <a href=\"http:\/\/www.kingfish-zeeland.com\" target=\"_blank\" rel=\"noopener\">Kingfish Zeeland<\/a> op land gekweekt door initiatiefnemers Kees Kloet, Ohad Maiman en Hans Den Bieman in een duurzaam recirculatiesysteem met gezuiverd Oosterscheldewater, waarbij het zeemilieu niet belast wordt. De vis krijgt biologisch voer en er wordt geen antibiotica gebruikt in het kweekproces. De kwekerij maakt gebruik van groene energie, waaronder windenergie en warmtepompen.
